Spinach & Bacon Meal Prep Sandwiches

  • 6 Bays® English Muffins
  • 6 Eggs
  • 1/8 Cup Whole Milk
  • 3/4 tsp Salt
  • 3 Slices of Bacon
  • Spinach
  • Cheese
  • Butter


  • 1. Preheat oven to 300 degrees. Generously oil a rimmed half sheet pan (13” x 18”).
  • 2. Whisk the eggs, milk and salt together.
  • 3. Cut the bacon into small pieces. Fry in a pan until crispy. Add the spinach and stir until wilted. Using tongs, let excess fat drip off for a few seconds before adding your bacon and spinach to the egg mixture.
  • 4. Pour the egg mixture into the oiled half sheet pan. Bake for 15 minutes, until just set.
  • 5. Remove, cool and cut into rounds. Spread English muffins with butter and place an egg round on each one.
  • 6. Add cheese, wrap in parchment baking paper and store for the week ahead.
  • 7. When you are ready to enjoy, unwrap the sandwich and place in a toaster oven or air fryer.
  • 8. Add your favorite toppings, like avocado and sriracha, and enjoy!
