Ingredients

  • Original Bays® English Muffins
  • Prosciutto
  • Poached Eggs
  • Pinch of Cayenne Pepper (For Serving)
  • Hollandaise:
  • 6 Egg Yolks
  • 2 TBSP White Wine Vinegar
  • 2 Cups Unsalted Buter (Melted)
  • 4 TBSP Lemon Juice
  • Pinch of Salt & Fresh Black Pepper
  • 1 tsp Dijon Mustard

Instructions

  • 1. Toast Bays English Muffins over olive oil until golden, season with salt and pepper.
  • 2. In a separate pan, toast prosciutto over light olive oil until crispy.
  • 3. Prepare your hollandaise sauce by whisking egg yolks with white wine vinegar over a double boiler, adding melted butter gradually and whisking constantly.
  • 4. Add dijon mustard, lemon juice, salt and pepper.
  • 5. Layer Bays English Muffin with prosciutto, poached egg and hollandaise, finish with a dash of cayenne pepper.
