Feta Cheese & Pomegranate Avocado

  • Original Bays® English Muffins
  • 2 Avocados, Medium Ripe
  • 1 TBSP Cilantro, Fresh
  • 1/2 Cup Pomegranate Seeds
  • 1 TBSP Lime Juice, Fresh
  • 2 tsp Balsamic Vinegar
  • Pinch of Sea Salt
  • 2 TBSP Extra Virgin Olive Oil
  • 2 tsp Jalapeño (Stems and Seeds Removed), Fresh
  • 1oz Feta or Goat Cheese


  • 1. In a medium bowl, combine pomegranate seeds, cilantro, vinegar, jalapeño, and sea salt.
  • 2. Toast your Bays English Muffins until they're crisp and nicely golden on top.
  • 3. While the muffins toast, combine avocado, lime juice, and a pinch of sea salt in a bowl; thoroughly mash with a fork.
  • 4. Assemble Bays English Muffins by dividing the avocado mash evenly between each piece of bread. Spoon pomegranate salsa overtop and sprinkle with feta or goat cheese. For extra flair, add chili flakes overtop.
