Ingredients

  • 12 BAYS® English Muffins
  • Butter, as needed
  • Old Bay or Cajun seasoning blend, to taste
  • 12 ounces sausage, cooked, crumbled
  • 1-1/2 cups diced green bell pepper
  • 1-1/2 cups diced red bell pepper
  • 12 large eggs
  • Salt and pepper, to taste
  • 12 slices cheddar cheese

Instructions

  • Lightly toast and spread butter over each muffin half. Sprinkle both halves with seasoning. Sprinkle sausage and peppers onto hot griddle; stir to lightly sauté. Ladle egg over mixture. Season to taste with salt and pepper. Cook, stirring to scramble, until set. Place scrambled egg mixture on bottom half of muffin. Top with cheese; cover with top half of muffin. Wrap in foil.
