Ingredients
- 12 BAYS® English Muffins
 - 12 tablespoons vegetable cream cheese
 - 1 medium red bell pepper, diced
 - 12 large eggs, whisked
 - Salt and pepper, to taste
 - 3-4 whole avocados, cut into 24 slices
 
Instructions
- Lightly toast and spread cream cheese over each muffin half. Sprinkle red peppers onto hot griddle; stir to lightly sauté. Ladle egg over peppers; cook without stirring until set. Season to taste. Fold omelet into quarters; place on bottom half of muffin. Top with avocado; cover with top half of muffin. Wrap in foil.
