Bays Beefeater Burger
- 2 pounds lean ground beef - 1/4 cup minced onions, if desired - salt and pepper - 8 Bays English Muffins, split and lightly toasted - 1/2 cup mango chutney - 8 strips bacon, cut in half and cooked - Welsh Rarebit Sauce [recipe follows]
Combine ground beef, onion, salt and pepper. Shape into eight patties. Cook to desired doneness. Place patties on toasted muffin halves and top each burger with one tablespoon of chutney. Spoon on cheese sauce evenly over each burger. Criss-cross bacon strips over cheese sauce. Top with muffin half.
Serves 8
Welsh Rarebit Sauce
- 1/2 pound sharp cheddar cheese, shredded - 1 tablespoon butter or margarine, softened - 3 tablespoons dry sherry - 2 teaspoons dry mustard - nutmeg, to taste - cayenne, if desired
In small saucepan, prepare sauce by combining cheese, butter or margarine, sherry, dry mustard and spices. Melt slowly over warm water, strirring constantly until sauce is smooth. Keep warm.
