Zesty Pepper Jack Chicken Melts
- 6 Bays English Muffins, split and toasted
- 4 cups cooked chicken*, diced
- 2/3 cup mayonnaise
- 1 cup (4 oz.) pepper jack cheese, shredded
- 1/4 cup celery, chopped
- 1/4 cup red onion, chopped
- 1/4 cup cilantro, chopped
- 1/4 cup pickled jalapeno chili peppers (optional), chopped
- 3 green onions, thinly sliced
Heat oven to 375°F. Combine all ingredients except Bays English Muffins in a medium bowl; mix lightly until well combined. Spoon mixture evenly over toasted muffin halves. Place on a cookie or baking sheet. Bake 12 to 14 minutes or until heated through.

*One whole rotisserie chicken, skinned and boned, will equal 4 cups diced cooked chicken.
