Bays Welsh Rarebit
- 4 Bays English Muffins, split - 2 packages (10 oz each) frozen Welsh rarebit (Cheddar cheese sauce) - 2 teaspoons prepared honey mustard - 8 slices ripe tomato - 8 slices cut bacon, preferably Applewood smoked, halved crosswise, cooked crisp* - 3 tablespoons chopped chives
Lightly toast muffin halves; place open-faced on four serving plates.
Cook rarebit according to package directions; stir in mustard. Top
muffin halves with sliced tomatoes. Arrange bacon over tomatoes in a
crisscross fashion. Spoon rarebit evenly over muffin halves and
sprinkle with chives.
*Variation: For a heartier rarebit, place sliced deli smoked turkey
breast on muffin halves before topping with cheese, tomato and chives.
