Bays Quarterly Recipe Contest
Spring '09 Contest: “Sensational Spears”
This recipe was submitted by Lindsay McSweeney of Winchester, Mass. In her recipe, a Grecian take on the more traditional Italian bread salad, or panzanella, freshly toasted English muffin pieces are combined with roasted crisp-tender asparagus and feta cheese, and dressed with bright lemon-thyme vinaigrette, for a light springtime supper.
